Main Ingredients
  • 600 g cooked egg noodles Fresh egg noodles provide the best texture; however, dried ones can be used.
  • 8 cloves garlic Minced or pounded into a rough paste.
  • 3 Tbsp unsalted butter Use high-quality butter.
  • 1 Tbsp olive oil For added depth of flavor.
  • 1 Tbsp oyster sauce Look for brands with simple ingredients.
  • 1 Tbsp Golden Mountain Sauce (or Maggi Seasoning or soy sauce) Adds an umami kick.
  • 1 Tbsp fish sauce Use high-quality fish sauce.
  • 35 g finely grated Parmesan cheese Grate fresh for the best flavor.
  • Freshly ground black or white pepper, to taste A finishing touch.
  • 1 lemon (optional) A squeeze can brighten the dish.
  • 1 green onion, chopped For garnish.

Method
 

Preparation
  1. Prepare the Noodles: If using pre-cooked egg noodles, gently pull apart and rinse under cold water to remove excess starch, then drain.
  2. If using uncooked noodles, cook according to package instructions, rinse in cold water, and set aside.
  3. Mince the Garlic: Pound garlic using a mortar and pestle or mince finely with a knife.
Cooking
  1. Mix the Sauces: In a small bowl, combine the oyster sauce, fish sauce, and Golden Mountain sauce. Stir until blended.
  2. Sauté Garlic: In a wok, melt butter and olive oil over low heat. Add minced garlic and sauté until fragrant, about 3-4 minutes.
  3. Toss Noodles: Increase heat to high, add the cooked noodles and sauce mixture, tossing continuously for about 2-3 minutes until hot.
  4. Add Cheese: Remove from heat, mix in grated Parmesan until melted. Optionally add lemon juice.
  5. Plate and Serve: Garnish with pepper and chopped green onions. Serve with lemon wedges.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently with olive oil. You can also prep the sauce and garlic ahead of time.
