Preparation
- Prepare the Noodles: If using pre-cooked egg noodles, gently pull apart and rinse under cold water to remove excess starch, then drain.
- If using uncooked noodles, cook according to package instructions, rinse in cold water, and set aside.
- Mince the Garlic: Pound garlic using a mortar and pestle or mince finely with a knife.
Cooking
- Mix the Sauces: In a small bowl, combine the oyster sauce, fish sauce, and Golden Mountain sauce. Stir until blended.
- Sauté Garlic: In a wok, melt butter and olive oil over low heat. Add minced garlic and sauté until fragrant, about 3-4 minutes.
- Toss Noodles: Increase heat to high, add the cooked noodles and sauce mixture, tossing continuously for about 2-3 minutes until hot.
- Add Cheese: Remove from heat, mix in grated Parmesan until melted. Optionally add lemon juice.
- Plate and Serve: Garnish with pepper and chopped green onions. Serve with lemon wedges.
Notes
Store leftovers in an airtight container for up to 3 days. Reheat gently with olive oil. You can also prep the sauce and garlic ahead of time.
