Method
Mango Layer
- In a blender, blend the mango cubes and orange juice until smooth.
- In a small pot, add the water and agar agar powder, stirring to distribute. Bring to a boil over medium heat while stirring constantly until fully dissolved.
- Add sugar to the pot, followed by the mango puree, mixing well until fully combined.
- Pour the mango mixture into a mold. Add reserved mango cubes and mint leaves for garnish. Let it set in the refrigerator until firm, about 1-2 hours.
Coconut Layer
- In another pot, mix the water and agar agar powder. Bring to a boil and stir until dissolved.
- Add sugar and salt, then pour in the coconut milk. Mix until well combined.
- Carefully pour the coconut mixture over the set mango layer in the mold. Refrigerate again until fully chilled and set.
Finishing Touch
- Once set, remove from the mold, cut into cubes, and serve.
Notes
Store in the fridge for up to 5 days. Can be prepared a day in advance.
