Ingredients
  

For the Mango Layer
  • 250 g mango flesh, roughly cubed (from about 1 1/2 – 2 mangos, scant 2 cups) Use ripe, fragrant mangoes for best flavor.
  • 1 whole Flesh of 1 mango, cut into 1-cm cubes (for garnish) Reserved for garnish.
  • 1/2 cup orange juice (freshly squeezed is best) Fresh juice enhances the flavor.
  • 1 1/4 cups water Used for dissolving agar.
  • 2 tsp agar agar powder Ensure it's fully dissolved for best texture.
  • 1/3 cup sugar (adjust based on the sweetness of mango) Sweetness can be adjusted.
  • to taste lime juice For added zesty flavor.
  • 15 small leaves mint leaves, optional (for garnish) For presentation.
For the Coconut Layer
  • 2/3 cup water Used for dissolving agar.
  • 1 tsp agar agar powder Important for setting the layer.
  • 4 Tbsp sugar (or to taste) Adjust sweetness as desired.
  • 1/8 tsp salt Enhances flavor.
  • 2/3 cup coconut milk (choose full-fat for richness) For a creamy texture.

Method
 

Mango Layer
  1. In a blender, blend the mango cubes and orange juice until smooth.
  2. In a small pot, add the water and agar agar powder, stirring to distribute. Bring to a boil over medium heat while stirring constantly until fully dissolved.
  3. Add sugar to the pot, followed by the mango puree, mixing well until fully combined.
  4. Pour the mango mixture into a mold. Add reserved mango cubes and mint leaves for garnish. Let it set in the refrigerator until firm, about 1-2 hours.
Coconut Layer
  1. In another pot, mix the water and agar agar powder. Bring to a boil and stir until dissolved.
  2. Add sugar and salt, then pour in the coconut milk. Mix until well combined.
  3. Carefully pour the coconut mixture over the set mango layer in the mold. Refrigerate again until fully chilled and set.
Finishing Touch
  1. Once set, remove from the mold, cut into cubes, and serve.

Notes

Store in the fridge for up to 5 days. Can be prepared a day in advance.
