  • 1 teaspoon cumin seeds Adds earthy tones.
  • 1 piece kaffir lime (rind only) Fresh zest is ideal!
  • 2 pieces green spur chilies (chopped) Adjust for spice level.
  • 1.1 ounces green Thai chilies Fresh or dried according to your preference.
  • 1 teaspoon Thai shrimp paste A must for authentic flavor.
  • 1 teaspoon curry powder Adds depth.

Preparation
  1. Gather all your fresh ingredients and prep them meticulously.
  2. Pound the shallots in a mortar with a pestle until fine, about 2-3 minutes.
  3. Add the garlic and continue to pound until quite fine, scraping the sides of the mortar.
  4. Add the coriander seeds, white peppercorns, galangal, and lemongrass, continuing to pound until well-incorporated (around 3-5 minutes).
  5. Finish by adding the green spur chilies, green Thai chilies, Thai shrimp paste, and curry powder; blend until you reach your desired consistency (approximately 4-5 minutes).

Notes

For the best results, always aim for fresh herbs and spices and ensure all ingredients are at room temperature. Store your paste in an airtight container for up to two weeks or freeze for longer storage.
