Ingredients
  

Tea Ingredients
  • 2 Tbsp Thai tea leaves Use high-quality loose-leaf Thai tea.
  • 1 cup off-the-boil water Just below boiling to avoid bitterness.
  • 4-5 teaspoons sugar Adjust to taste.
  • 0.5 piece juicy lime Fresh is best for maximum flavor.
  • to taste ice For serving.

Method
 

Preparation
  1. Bring your water to just off boiling, around 195°F (90°C).
  2. Place the tea leaves in a cloth filter or directly into your cup.
  3. Pour the hot water over them and allow them to steep for 3-5 minutes.
Sweetening and Cooling
  1. Once steeping is complete, strain the tea to remove the leaves.
  2. Add the sugar while the tea is warm and stir until dissolved.
  3. Let the tea cool for about 5 minutes, or drop an ice cube in to chill faster.
Serving
  1. Fill a glass with plenty of ice and squeeze the juice from half a lime over the ice.
  2. Pour the sweetened tea over the ice and lime, stir gently, and adjust sweetness with more lime or sugar if needed.

Notes

Best consumed within 24 hours, can be stored in the fridge for up to 3 days. Use fresh limes for the best flavor.
