Preparation
- Chop the chilis and garlic into small pieces for better mixing.
- In a mortar, pound the chopped garlic until slightly crushed. You can also use a food processor.
- Add the chilis to the garlic and pound together until they form a similar texture.
- Pour 4 tablespoons of water into a saucepan and heat it over medium heat.
- Add the salt, chili-garlic mixture, sugar, and vinegar to the saucepan.
- Stir well and bring the mixture to a boil, watching it closely.
- Reduce the heat to low and let it simmer until the sauce reduces by half, approximately 5 minutes.
- Turn off the heat and allow the sauce to cool slightly before transferring it to a container.
Notes
Store in a sealed container in the fridge for up to two weeks. You can make this sauce a day in advance for better flavors.
