Ingredients
  

For the sauce
  • 5 pieces red Thai chilis, rinsed and stems removed Look for fresh chilis that are vibrant and firm. For a milder sauce, consider using fewer chilis or removing the seeds.
  • 1 head garlic, peeled Fresh garlic will give your sauce a robust flavor. Avoid pre-minced garlic.
  • 4 tablespoons water Helps in achieving the right consistency for the sauce.
  • 1 teaspoon salt Regular table salt works fine, kosher salt is also an option.
  • 6 tablespoons granulated sugar The sweetness is key for the perfect balance.
  • 4 tablespoons vinegar White vinegar is traditional, rice vinegar can be used for a mellow flavor.

Method
 

Preparation
  1. Chop the chilis and garlic into small pieces for better mixing.
  2. In a mortar, pound the chopped garlic until slightly crushed. You can also use a food processor.
  3. Add the chilis to the garlic and pound together until they form a similar texture.
  4. Pour 4 tablespoons of water into a saucepan and heat it over medium heat.
  5. Add the salt, chili-garlic mixture, sugar, and vinegar to the saucepan.
  6. Stir well and bring the mixture to a boil, watching it closely.
  7. Reduce the heat to low and let it simmer until the sauce reduces by half, approximately 5 minutes.
  8. Turn off the heat and allow the sauce to cool slightly before transferring it to a container.

Notes

Store in a sealed container in the fridge for up to two weeks. You can make this sauce a day in advance for better flavors.
